Almond Flour Enriched Dinner Rolls

These almond flour enriched dinner rolls are delicious and extra nutritious thanks to the addition of almond flour in this recipe. The addition of almond flour cuts the overall carbohydrates down from regular rolls and ups the protein and healthy fats. These also fill you up quicker and seem to stick with you a little longer because of the extra fats and proteins in them.

I love rolls but also have to watch my carbohydrates due to PCOS (poly cystic ovarian syndrome, an endocrine which causes insulin related issues). So I love to play around with different add in’s and adjustments to lessen the carbs a bit while still keeping things delicious.

I feel better about eating these rolls for the holidays or special family meals and I don’t feel like I’m sacrificing any flavor or texture. If you make this recipe into 20 rolls then 1 roll is about 11.9 net carbs, with 6.5 grams fat and 2.4 grams of protein. They are also 118 calories per roll.

Instructions

  1. Add water and yeast together.
  2. Stir in the melted butter, then salt, almond flour and flour and mixture together.
  3. Knead for 5 minutes then place in greased bowl and let rise for 1 hour.
  4. Gently punch dough down and roll into a large circle and cut into 20 wedges, like you would slice a pizza then starting at the widest end of the dough, roll up into a croissant style roll.
  5. Place rolls onto a greased pan with enough room for the rolls to double in size.
  6. Allow the rolls to rise 45 minutes or until they look nearly doubled.
  7. Preheat oven to 350 F.
  8. Bake 16-20 minutes or until tops are golden and rolls are cooked through.
  9. Optional, brush tops with butter after baking and enjoy.
