Keto Chocolate Chip Cookies

These keto chocolate chip cookies are a major dessert fix at my house and I love them! They are as close to a classic chocolate chip cookie you will get at home while still being in the parameters of keto or low carb and high fat.

What’s the carb count?

Well depending on ingredients used, these are between 7-10 net carbs per giant cookie! I like to make my cookies big but if you want a lower carb count you can make these half the size and they will be between 3.5 to 5 total net carbs. The reason this number varies is because the ingredient brands vary slightly.

I ran this recipe though a recipe calculator for my specific ingredients of monk fruit sweetener and using lily’s milk chocolate baking chips made with stevia and my cookies ended up being around 7 net carbs. These have between 10-12 grams of fat in them too, that number depends if you add the walnuts to the dough. You can run the recipe for your specific ingredients if you need exact numbers however, if you are not watching them that closely or you can just assume they are between 7-10 or 3.5- 5 if doing a smaller cookie.

Most of the carbs come from the almond flour, a little flour or gluten free baking mix and the chocolate chips and if adding walnuts, it will add another carb to the recipe. I like my cookies with lots of chocolate chips so I add alot, if you want to decrease the amounts then obviously the carbs will decrease.

These cookies are pretty close to being a real chocolate chip cookie without actually being one, but I enjoy eating them and when I grab a glass of almond milk to go with it, I feel pretty close to eating a real deal chocolate chip cookie. If you are doing keto or watching your carbohydrates you will agree with me! I am picky when it comes to sugar free desserts and it needs to be worth it to me and I feel like these are worth it!

What you need to make Keto Chocolate Chip Cookies:

Makes 12 large cookies or 24 small cookies

  • 1/2 cup salted butter – slightly firmer than room temperature
  • 1 teaspoon molasses or sugar free syrup – optional (this helps give them the traditional chocolate chip cookie flavor but can be left out to reduce carbs)
  • 3/4 cup monk fruit sweetener – I really like Lakanto version, however, you can also use any sweetener of choice
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups almond flour
  • 2 tablespoons gluten free baking mix or flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup sugar free chocolate chips
  • 1/2 cup walnuts pieces – optional

Instructions

  1. Preheat oven to 375 F.
  2. In a mixing bowl, add salted butter, molasses or sugar free syrup and monk fruit sweetener and blend together.
  3. Add the egg and vanilla and mix.
  4. Add in the almond flour, gluten free baking mix or flour, salt and baking soda and mix the dough together well.
  5. Add in the chocolate chips and nuts (if using).
  6. Roll into cookie dough balls and place on a parchment paper lined or greased cookie sheet and bake for 12-14 minutes.
  7. The cookies will look loose still but the edges will start to get golden.
  8. Remove from oven and let them cool completely on the cookie sheet before taking the cookie off to enjoy.

I made these tonight. I used 1/2 coconut sugar and 1/4 c. Splenda. I did not use any syrup/ molasses. My batch made 16 cookies. Being they were smaller than yours they took lless time to bake. I baked mine 10-11 minutes. They turned out delicious and 4 cookies didn't even raise my husbands blood sugar.
