Spiced Apple Bread

I love this spiced apple bread and so does my family! My kids devour it and have zero complaints, which is a major win! Makes the perfect breakfast, brunch or snack bread. Not overly sweet yet plenty sweet enough. Tastes great on it’s own, with butter or even peanut butter or nut butter spread on top.

My 8 year old saw me shredding apples to put in this bread and had his hesitations. I told him the apples bake into the bread and you don’t notice the apple shreds so he skeptically agreed to try it, with a little encouragement from his younger brother who had already eaten a whole slice at this point. Once my 8 year old took a bite, all fear went away and he exclaimed “I LOVE it!!” Ha! Probably the best response any mom could hear.

This bread has a flavor profile of spices that will please any sophisticated palettes as well, with cinnamon, ginger, nutmeg and cardamom running through the bread along with the apple, it’s easy to love.

The apple makes up the majority of the liquid used in this recipe so it gives it a lovely apple undertone that works great with the spices. The apple also gives it an irresistible texture.

My family could and probably does eat our body weight in apples each year, we love them and eat them all the time, usually raw with or without peanut or almond butter. However, this week I found myself with 18 apples on hand and another produce order already processed that was bringing around that many more the next day. I knew I needed to get baking. I chopped up 2 apples for munching then another 8-9 to make 3 batches of this bread. Each loaf uses one and a half cups of apples, which is about 2 larger apples worth shredded. I leave out the core but keep the skins on, you won’t notice them in the bread.

What you need to make Spiced Apple Bread:

Makes 1- standard bread loaf

  • 1/2 cup salted butter – melted
  • 1 cup sugar
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cardamom -optional
  • 3 eggs
  • 1 1/2 cups shredded apple -Any type of apple, peels left on, leave out the core, don’t squeeze juice out
  • 1 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons milk

Instructions

  1. Preheat oven to 350 F.
  2. Add all ingredients together and blend well.
  3. Grease bread pan, add parchment paper on bottom for an easy release.
  4. Pour in batter into greased pan.
  5. Bake for 50 minutes to 1 hour or until the center is risen and feels firm and cooked to the touch.
  6. Let bread cool completely before slicing.
