Instant Pot Chipotle Pork

This instant pot chipotle pork is super easy to put put together and works great in a variety of dishes, like tacos, burritos, ramen noodles, salads, on it’s own or whatever you can think of to use it in.

I even served this pork over chili spiced sautéed swiss chard, with feta and a fried egg on top and it tasted amazing! So it really can be used in a lot of different ways.

I love how easy the instant pot makes this recipe to cook. You just add the ingredients and program in 45 minutes on high pressure and the instant pot does all the heavy lifting.

Instant pot chipotle pork

You can use a variety of different pork roast cuts for this recipe. pork loin roast, which is leaner and shredded less easily – the roast shown in my pictures is a loin roast. You can use a shoulder, picnic, butt roast too and they will be better for shredding.

Made with pork loin roast so it sheds a little thicker than other pork roasts

This pork is medium heat but can very easily be made spicier. All you need to do it grind up the chipotle peppers with some of the cooking liquid in a food processor or blender and then re-add it to the mixture. This will spice things up. If you want it less spicy you can half the chipotle peppers and then remove them from the cooking liquid before shredding and serving the meat. For medium heat you will remove the whole chipotle peppers after the meat is finished cooking.

Chipotle pork tostadas

I love the smokiness that Chipotle’s in adobo sauce bring to this meat. It also has a subtle sweetness to it that balances well with the spice and flavors from the pork.

The tostadas you see here are dipped in the meats cooking liquid then pan fried with cheese on top then shredded pork, avocado, pico de Gallo, sliced jalapeño, radishes and fresh cilantro. I also added ranch dressing on top after. If you love sauce you can spoon on more of the cooking liquid after they are all assembled. They are amazingly delicious!

The pork creates a delicious sauce or consommé (if you want to get technical with terms) with the juices of the pork and the beef or chicken broth you add to this recipe. Beef and chicken broth will both work great in this recipe.

  1. Add all ingredients into the instant pot and cook on high pressure for 45 minutes with a quick release.
  2. Spoon chipotle peppers out if you want a milder pork or you can blend then up in a food processor with some stock then add them back to the pork and sauce if you want a little more heat to the pork.
  3. Shred or dice pork, depends on the cut of meat you have and enjoy on it’s own or in whatever dish you want to use it in.

Ingredients

  • ~3 pound pork roast – picnic shoulder or loin
  • 7 ounce can of chipotles in adobo sauce
  • 14 ounces beef or chicken broth or stock
  • 1 tablespoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon chili powder – chipotle chili powder works great too
  • 1 tablespoon brown sugar

Instructions

  • Add all ingredients into the instant pot and cook on high pressure for 45 minutes with a quick release.
  • Spoon chipotle peppers out if cooking liquid if you want a milder pork or if you want a spicier pork you can blend the peppers up in a food processor with some of the cooking liquid hen add them back to the pork and rest of cooking liquid.
  • Shred or dice pork then add meat back in with cooking liquids.
  • Enjoy on it’s own or in whatever dish you want to use it in.
