These Tex Mex Turkey Meatballs make a quick, easy and delicious dinner. They are filled with turkey, red onion, jalapeno, cilantro, chili powder and more.
These can be served on their own or over rice. I love to serve them with fresh Pico de gallo, sour cream and shredded lettuce.
These are a medium spiced meatball but you can make them spicier or milder if you need. You can use bell peppers instead of the jalapenos and use a green enchilada sauce for a milder flavor. To make it spicier you can leave the seeds in the jalapeno.
What you need to make Tex Mex turkey meatballs:
Makes 8 meatballs
- 1 pound ground turkey
- 1/4 cup red onion – diced
- 1 jalapeno – seeds removed, diced
- 1/4 cup minced cilantro
- 1 tablespoon garlic – minced
- 1/4 teaspoon chili powder
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/3 cup quick oats
- 1/4 cup milk
- 3 tablespoons olive oil
- 10 ounce can red enchilada sauce
- 1 cup shredded Mexican blend cheese
Instructions
- Preheat oven to 350 F.
- In a mixing bowl, add ground turkey, red onion, jalapeno, minced cilantro, garlic, chili powder, salt, black pepper, quick oats and milk.
- Mix everything together until it’s all well mixed.
- Divide meat mixture into 8 and roll into meatballs.
- In an ovenproof pan, heat olive oil and brown each meatball, turning over so each side is browned.
- Add red enchilada sauce over the tops of the meatballs and place in the oven for 30 minutes.
- Sprinkle with cheese and bake for 10 minutes.
- Serves on their own or over rice.
