These chocolate chip scones with vanilla frosting are delicious, perfectly sweet and buttery and they double for both a great breakfast or brunch item but also as a dessert or snack. They are really soft and tender inside with hunks of chocolate spread through out, the sweet frosting gives them an extra boost of sweetness that makes them taste delicious. You can also keep the frosting off and they are still yummy.
My little girl calls these scones cookies and she loves them. I actually made this recipe for my kids when they were home during online learning. They only had in person school 2 days in 2 weeks so that means we bake lots of snack and things to keep their tummies full and they can help with. They helped frost these and my 4 year old ended up with the frosting bowl and a spoon. Smart little thing, I tell you, she knows a good treat when she finds one.
I love scones and have always said they are the gateway to the world of pastry. If you want to feel like a pastry chef without a lot of effort or time invested, make some scones. You will cut the butter into your dough just like you would with other pastries so you’ll get soft, tender and butter speckled dough. And it can all be done in a mixing bowl, using an electric mixer, pastry cutter, forks, or two butter knifes.
If I am making these without my electric mixer, then I actually love to cut the butter up with a knife into small chunks then add it to the batter and stir with a fork smashing up the large butter chunks into smaller ones in the flour mixture. It’s easy to do and results in delicious textured dough.
So unlike actual pastry dough, you won’t have the lamentation layers of a croissant but for scones it doesn’t matter because it’s still delicious and a perfect canvas for great flavors.
The leavening or rising agent in scones is baking powder, as opposed to yeast that you would use with other pastries. Baking powder requires a fine balance when using it because you don’t want to add too much or you will get that bitter baking powder aftertaste that takes away from the flavors. However, you do need to add enough so the scones are light, tender and not overly dense. So the amount listed in this recipe is the perfect amount to get a good rise and not have any negative aftertastes!
What you need to make chocolate chip scones with vanilla frosting:
Makes 12 scones
- 3 cups flour
- 1/4 cup sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup salted butter – cold
- 1 cup chocolate chips – semi- sweet, milk or dark will work
- 1 cup milk
Vanilla frosting:
- 1/4 cup salted butter – softened
- 1/4 cup milk
- 16 ounces powdered sugar (1 pound bag)
- 1 teaspoon vanilla extract
- pinch of salt
Instructions
- Preheat oven to 400 F.
- Add flour, sugar, baking powder and salt into a mixing bowl and mix together.
- Add cold butter into flour and mix it into flour so you have pebble sized chunks throughout the mixture.
- Add the chocolate chips or chunks to the mixture and mix them into flour mixture.
- Add the milk and stir until dough forms and comes together.
- Line a cookie sheet with parchment paper or a baking sheet. lightly grease parchment with non-stick spray.
- Divide dough into 12 balls and gently press them down, into a disc or round.
- Bake for 12-14 minutes.
- Remove from oven and let them cool mostly, they can still be kind of warm.
- In another bowl, mix together the butter, milk, powdered sugar, vanilla and salt and blend until smooth.
- Frost each scone and enjoy!
