Garden Rotini Pasta Salad

I love a good pasta salad and this garden rotini pasta salad is a goodie and totally delicious! It’s fresh, hearty and so tasty! I grew up with pasta salads all summer long and I make them all year round. They are easy to make, feed a crowd and are also a great way to get in some extra veggies.

The garden rotini pasta salad pictured features tomatoes and peppers grown in my own garden this summer. Though it’s December now I am just now getting to this recipe from the summer! 2020 is been quite a year and with 4 kids part time online schooling the recipes are a little piled up on my desk at the moment but I will get to them, even if it’s summer in December. ha ha.

I love to add lots of herbs to this salad, you can use fresh or I prefer to just use Italian herb seasoning because it’s easier and I always have it on hand.

I grew up with this pasta salad always having ham and pepperoni in it, I love it that way but I also love it without them too so I added those as optional ingredients. It’s honestly delicious both ways!

What you need to make your Garden Rotini Pasta Salad:

Serves 8

  • 16 ounces garden rotini – cooked, drained and cooled
  • 1 bell pepper – diced, any color
  • 6 medium tomatoes – diced
  • 1/2 cup red onion- diced
  • 6 ounces black olives
  • 8 ounces mozzarella cheese – chunked
  • 1 cup ham – diced, optional
  • 1 cup pepperoni – diced, optional
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1.2 teaspoon black pepper
  • 1/4 teaspoon sugar
  • 1/8 cup white vinegar
  • 1/8 cup balsamic vinegar
  • 1/4 cup olive oil

Instructions

  1. Cook pasta, drain and cool.
  2. prepare all vegetables, cheese, olives and meat and add to a bowl with the cooled pasta.
  3. In a bowl, add Italian seasoning, salt, black pepper, sugar, white vinegar, balsamic vinegar and olive oil and whisk together.
  4. Pour over pasta mixture and stir well.
  5. Serve chilled.
  6. Enjoy!
