Cheesy Buttermilk Biscuits

Cheesy buttermilk Biscuits! These are insanely good and easy to make! If you love a good buttermilk biscuit then you will love this cheesy version. These are perfect for both weeknight and weekend dinners, lunches, brunches and snacks because they come together relatively quickly.

They can be cut with a round cookie cutter, biscuit cutter or even a large rimmed glass. Growing up I always used a cup to cut out biscuits, cookies or anything that needed to be round. I have to admit it’s a little nostalgic that way and tends to kind of round the edges so you know when a cup has been used versus a biscuit cutter or cookie cutter that show the layers in the biscuit a little more. Both ways work great though.

How to make these cheesy buttermilk biscuits: 

Makes 15 biscuits

  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/8 cup buttermilk or 1 cup buttermilk and 2 tablespoons white vinegar mixed if you don’t have buttermilk
  • 1/2 cup salted butter – cold 
  • 1 cup shredded cheddar or mixed cheese blend
  • 1/4 cup parmesan cheese

Instructions

  1. Pre-heat oven to 375 F.
  2. Add milk with vinegar and set aside if making your own buttermilk.
  3. Mix all dry ingredients together.
  4. Add cold butter chunks to dry mixture and quickly mash into flour mixture with a fork or pastry cutter until butter and flour are crumbly looking. Don’t use your fingers it melts the butter and will effect the layers in your biscuits.
  5. Add shredded cheese blend and Parmesan and mix together.
  6. Slowly add buttermilk or buttermilk mixture, stirring together as you add, once it starts to come together and form into a loose ball, then place on a floured surface and lightly press dough ball down into a flat layer with your finger tips. Use a biscuit cutter or a cup to cut out rounds.
  7. Place on greased cookie sheet and Bake for 15-18 minutes, until tops start to lightly brown.
