Peanut Butter Lovers Cookies

These peanut butter lovers cookies are jammed pack full of peanut butter and if you are a peanut butter lover then you will love them! They have a great cookie chew or texture to them and a little extra peanut butter goodness in the middle. I top mine with a little sprinkle of powdered sugar and they are perfect.

I do have a variation of this recipe that has chocolate frosting, it is essentially the same cookie but with the addition of chocolate frosting. The chocolate buttercream recipe can be found here. My peanut butter and chocolate fans at my house go crazy over that variation, but I have some that just prefer the peanut butter so I usually do half peanut butter and half with chocolate frosting.

The dough for these cookies can be frozen to bake another time. All you need to do is make the dough, roll into balls and place them untouching on a cookie sheet and freeze, once frozen, add dough balls into a zip-lock

Instructions

  1. Preheat oven to 350 F.
  2. In a mixing bowl or electric mixer with paddle attachment, add salted butter, peanut butter, powdered sugar, sugar and vanilla to a mixer and blend until smooth.
  3. Add eggs and blend.
  4. In another bowl, mix flour, baking soda and salt then add to the butter mixture.
  5. Roll dough into balls then press in on the middle with your finger and spoon in about 1/4 teaspoon peanut butter into the hole.
  6. Bake for 10-12 minutes then place on a cooling wrack.
  7. Dust tops with powdered sugar and enjoy!
