Easy Spiced Pear and Walnut Galette

This easy spiced pear and walnut galette is super simple to make and tastes amazing! A galette is basically a lazy pie, it only requires rolling out the dough and filling with filling and then ruggedly folding up the sides to make a little package like sheet pan pie. The filling ratio is less filling than a traditional pie and the crust is deliciously decadent.

The buttery crust has walnuts mixed in so you get little hunks of walnut with each bite of crust. There are also walnuts on top that get perfectly toasted in the baking process. The pear cooks down perfectly and tastes so delicious with the spices and drizzle of honey at the end.

This is easy enough to make for a weeknight treat and fancy enough to make for a holiday dinner party! It tastes amazing on it’s own and of course delicious with a scoop of vanilla ice cream or whipped cream on top.

Pears work so great with strong spices, like cloves, ginger, cinnamon and nutmeg, They can hold up to the flavors and you get the beautiful subtle sweetness from the pears.

Pears are also filled with lots of juice, in my experience they have even more than apples, if you can believe that! The baking process evaporates the water from their juice and leaves behind a concentrated and delicious pear like jam that surrounds the pears in this galette.

What you need to make this easy spiced pear and walnut galette:

Serves 6

For walnut pie crust:

  • 1/4 cup walnuts pieces
  • 1 1/2 cups flour
  • 1 tablespoons sugar
  • 1 teaspoon salt
  • 1/2 cup salted butter – chunked, cold
  • 3-4 tablespoons ice cold water – add water and mix until dough pulls together

For Filling:

  • 4 pears – peeled, cored and sliced
  • 3 tablespoons sugar
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoons ground nutmeg
  • 4 tablespoons walnut pieces
  • 1 tablespoon warmed honey – for on top after cooking

Instructions

  1. Preheat oven to 400 F.
  2. Mix together your walnut pieces, flour, sugar and salt.
  3. Add cold butter chunks to the flour mixture and cut in with a pastry cutter, fork or your hands until pea or larger sized butter pieces are found.
  4. Add in the cold water as you mix until dough comes together into a ball.
  5. Roll out dough into a large circle or rectangle (personal preference on the shape) and lay on a parchment paper lined cookie sheet.
  6. Add sliced pears to the middle of the dough, sprinkle with sugar, cinnamon, cloves, ginger, nutmeg and walnut pieces.
  7. Fold up the sides of the dough around the pears but leaving the most part of the center area of the pears exposed.
  8. Bake for 35-40 minutes or until dough gets slightly golden or feels cooked when pressed on.
  9. Remove from the oven and drizzle with warm honey.
  10. Enjoy!
