This healthy protein packed apple mug muffin with the perfect healthy breakfast or anytime snack. It’s low carb, gluten free, dairy free, full of healthy fats and protein packed. Oh and delicious!
It’s apple season and this mug muffin is a great way to enjoy the season while keeping things healthy and for me keeping my blood sugar levels in check. It’s full of healthy and sustaining ingredients and it’s super quick and easy to make! I use a large mug or ramekin to make this in, the cake doesn’t rise much so you should not have to worry about it bubbling over the sides of the mug.
What you need to make healthy protein packed apple mug muffin:
makes 1 large mug muffin
- 1/4 cup almond flour
- 1 tablespoon monk fruit or sweetener of choice
- 1/8 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon – plus more for on top
- pinch of salt
- 1 teaspoon hemp seeds
- 1/4 cup shredded apple
- 1 egg
- 2 teaspoons water
Instructions
- Add the almond flour, monk fruit, nutmeg, cinnamon, salt, hemp seeds and stir together.
- Add the shredded apple, egg, water and mix together until smooth.
- Microwave for 1:45 to 2 minutes or until the center is cooked through.
