Today is national peach pie day! I thought of all the foodie holidays, today is this website’s day to celebrate! This no bake peach pie for two is the perfect summer treat that is so easy to make and requires no baking! This recipe celebrates the bright fresh, juicy and sweet flavors of the peach and is highlighted by a few simple other flavors, like a buttery graham cracker crust and a little zip of lemon.
We are in the middle of heat wave and I didn’t want to turn my oven on today to bake a peach pie so I took a no bake approach that really celebrates the summer peach; which is fresh, sweet, tart and delicious!
We bought a 25 pound box of peaches last week from a local farm and we have been eating them non-stop! My kids love them just as much as I do and they really are the perfect dessert by themselves and this recipe just amps up those flavors and turns them into a delightful dessert!
I really wanted to top mine with vanilla whipped cream or ice cream but we were out and I didn’t feel like making a corona virus shopping trip today so we did without the extra creamy topping and it was still irresistibly delicious! I will definitely have some for the next time I make this dessert!
There are a few tricks to this recipe, first of all you don’t want the crust to get soggy so to avoid this you will need to chill the crust before filling it with the peaches and let the peaches sit in the gelatin mixture for a few minutes before adding them to the chilled crusts. Soggy crust are still delicious but those tips will make this dessert taste even better.
I make this recipe using 2 – 3 inch mini cake tins, you can make it in a bowl or cup too or using a 6 inch pie tin or tart pan.
What you need to make no bake peach pie for two:
Serves 2
- 2/3 cup crushed graham crackers – about 6 crackers crushed
- 1 tablespoon sugar
- 3 tablespoons melted butter
- 1 teaspoon unflavored gelatin
- 1/4 cup sugar
- 1 teaspoon lemon juice
- 3 tablespoons boiling water
- 2 ice cubes
- 2 cups peach slices – skin and pit removed – about 2 peaches
Instructions
- Add crushed graham crackers, sugar and melted butter to bowl and mix well.
- Press mixture firmly into the bottom of 2 – 3 inch mini cake tins, a 6 inch pie pan or tart pan.
- Refrigerate crust for 10 minutes.
- Slice peaches into segments, remove the skins and pits and set aside.
- In a separate bowl, add sugar and gelatin and stir together.
- Boil water in the microwave or on the stove top then add into the sugar and gelatin mixture.
- Add lemon juice to gelatin mixture and stir until sugar is dissolved.
- Add ice cubes to mixture and stir until mixture come to room temperature then remove the ice cubes.
- Pour mixture over peaches and mix peaches around in it then set mixture in the refrigerator for 5 minutes.
- Spoon peaches out of gelatin mixture, leaving most of the liquid mixture in the bowl then add a little of gelatin liquid mixture over the top of pie.
- Refrigerate until gelatin is set, about 20 minutes.
- Top with whipped cream or ice cream and enjoy!
