Delicious Zucchini and Swiss Cheese Matafan with Herbed Butter

This zucchini and Swiss matafan with herbed butter is the perfect savory, rustic, simple, elegant and sophisticated breakfast that you will love! It’s soft, cheesy and tender interior perfectly contrasts the crispy, buttery and herby outside making it irresistibly delicious!

What is a matafan? A matafan is essentially a large rustic pancake that is most often savory. Matafan’s originate from eastern France and are typically eaten for breakfast or as a main dish along side a salad. I do not claim to be an expert in the origins of matafans but I have read that they were popular among peasants because they could be made with inexpensive ingredients. I think the peasants were onto something delicious and didn’t even know it.

zucchini and Swiss Cheese Matafan with Herbed Butter

This recipe is simple and yet sophisticated. That quality in a recipe gives it an honest and endearing quality and also allows the ingredients to shine through as the true stars.

What you need to make this zucchini and Swiss matafan with herbed butter:

Herbed Butter:

Instructions

  1. Add flour, onion powder, seasoned salt, cayenne pepper and baking powder together in a bowl and mix well.
  2. Add zucchini, Swiss cheese, eggs and milk and stir together.
  3. Heat a non-stick 8 to 10 inch skillet, larger pan will cook faster and be a little thinner, smaller pan will be thicker and take a little longer to cook through but both will work, cooking times for each size pan are below.
  4. Add olive oil to pan and heat to medium heat, heat is a major component to cooking this matafan perfectly.
  5. Add batter and cover skillet and cook for 8 minutes, if using both a 8 or 10 inch skillet. If matafan starts to brown too easily, reduce the heat to low.
  6. Use a large spatula to get under the matafan and flip quickly.
  7. Finish cooking 4 minutes with a 10 inch skillet and 6 minutes with a 8 inch pan or until a fork can be inserted in the middle and comes out clean, The Swiss cheese should not stick to the fork.
  8. Remove from heat and place on a serving dish so you can add herb butter, slice and serve.
  9. To make to herbed butter; add butter, parsley, garlic powder, onion powder and salt in a bowl. Mix well and add on top of matafan before slicing.
