I love oatmeal cream pies and so does my family. These ones are soft, chewy, perfectly spiced with cinnamon and have a creamy marshmallow buttercream filling.
My family loves the packaged oatmeal cream pies but these taste even better! These cookies are 100 percent homemade goodness and will make you feel like your grandma made them just for you.
What you need to make oatmeal cream pies:
Makes ~ 18 sandwich cookies
- 2 cups old fashion oats
- 2 cups flour
- 1 cup brown sugar
- 1 cup sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon molasses
- 1/2 cup butter – softened
- 1 teaspoon vanilla extract
- 3 eggs
For frosting:
- 1/4 cup salted butter – softened
- 1 1/2 cups powdered sugar
- 6 ounces marshmallow cream
- 1 teaspoon vanilla extract
- 2 teaspoons water – more to thin
- pinch of salt
Instructions
- Preheat oven to 375 F.
- Add oats into a food processor or blender and blend.
- Pour mixture into a mixing bowl and flour, brown sugar, sugar, baking soda, salt, cinnamon and nutmeg and mix well.
- Add molasses, butter, vanilla and eggs and blend mixture until dough comes together.
- Roll dough into round balls and place on a parchment paper lined cookie sheet.
- Bake for 10-12 minutes and then cool while you prepare the frosting.
- To make the frosting; blend all ingredients together and blend until smooth, add more water to thin if desired.
- Pipe or spoon frosting into middle of cookies and sandwich with another cookie, frosting will set after about 10 minutes.
- Enjoy!
