This cauliflower chicken Alfredo is a delicious and low carb version of a classic chicken Alfredo. This recipe is also really quick and easy to make. It’s perfect for a keto diet or anyone wanting this Italian classic dish without the carbs.
This dish would be perfect with a side salad to make the perfect vegetable packed dinner.
What you need to make cauliflower chicken Alfredo:
Serves 2
- 1 Steamable bag of cauliflower florets or about 2 1/2 cups cauliflower florets – cooked
- 1/2 pound chicken tenders
- Salt and pepper
- 1 tablespoon minced garlic
- 3 tablespoons bacon crumbles
- 1 teaspoon butter
- 1 teaspoon olive oil
- 1/2 teaspoon flour
- 1/2 cup half and half or milk of choice
- 3 tablespoons Parmesan cheese
Instructions
- Steam or cook your cauliflower and set aside.
- Season chicken tenders with salt and pepper and cook in a skillet until cooked through.
- Remove from pan and set aside.
- Add garlic, bacon bits, butter, olive oil to skillet, cook until garlic starts to soften then sprinkle with flour, stir then add half and half or milk.
- Add Parmesan cheese, cauliflower and chicken and stir until everything is covered.
