These keto monster cookies are delicious and perfect for any one doing a low carb – high fat diet. They are the perfect treat you may need at the end of a long day or to celebrate something special. Because these are monster cookies you can add any extra ingredients you want to these cookies to fit your liking but I will add a few options I like to add on the recipe below.
These cookies have lots of healthy fats and minimal carbs! I love to use monkfruit sweetener or stevia to make these but you can use whatever sweetener you prefer, for most baking sugar replace replacements measurements will be the same no matter the sweetener used.
What you need to make keto monster cookies:
makes 14 large cookies
- 1/4 cup salted butter – room temperature
- 1/4 cup peanut butter or nut butter of choice
- 3/4 cups sweetener of choice, monk fruit, stevia, splenda, etc.
- 1 teaspoon vanilla extract
- 1 egg
- 1 1/2 cups almond flour
- 1 tablespoon coconut flour – if you don’t have coconut flour you can use an additional teaspoon of almond flour
- 2 tablespoons flax seed meal
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Optional mix in’s:
- 1/4 cup walnuts, cashews, almonds, pecans or what ever nut mix you want
- 1/4 cup sugar free or dark chocolate chips
- Chia seeds
- hemp hearts
- unsweetened coconut flakes
Instructions
- Preheat oven to 375 F.
- Blend together the butter, nut butter, sweetener of choice and vanilla extract.
- Add in the egg and blend.
- In another bowl add together the almond flour, coconut flour, flax seed meal, baking soda and salt and mix well.
- Add dry mixture into the wet mixture and blend until well mixed.
- Add in your desired mix in’s, like nuts, chocolate chips, chia seeds, hemp hearts, coconut flakes, etc.
- Roll into 14 balls and place on a greased for parchment paper lined cookie sheet and press them down slightly.
- Bake for 8-9 minutes, remove from oven and let them cool slightly before moving them to a cooling rack.
