Extra Chewy No Bake Cookies

These extra chewy no bake cookies are the fudgiest, chewiest version of no bakes I have ever had. I have had people tell me it’s like eating a super soft tootsie roll mixed with a no bake cookie. I love a moist and fudgy no bake cookie so I took my recipe to the extreme.

These no bake cookies are easy to make and can be made for any last minute get together, after school snacks, or when you have a 9 pm chocolate craving and no chocolate in the house.

The biggest thing to watch out for in these cookies is to make sure you let the sugar melt completely so you don’t have grainy cookies, so you need to cook the sugar long enough. If the mixture seems like it’s burning you can remove it from the heat and add a little water to slow the cooking process and help the sugar melt.

Instructions

  1. Prepare a cookie sheet with parchment paper.
  2. In a pot, add sugar, corn syrup, water and heat mixture up and stir until the sugar dissolves.
  3. Add cocoa powder, peanut butter and salt and cook until mixture thickens slightly and starts to pull away from the bottom of the pan, this doesn’t take very long and mixture will still be pretty liquid, it will firm up when it cools. If it seems too cooked add a little more water and turn heat down.
  4. Add vanilla and oats and take off the heat and stir well.
  5. Spoon cookies onto parchment paper and let them cool until they set.
  6. I love to eat them extra cold so I chill them in the refrigerator.

  • 1 tablespoon vanilla extract
  • 2 cups quick oats or old fashion oats – old fashion oats will make them a little heartier and toothsome
