Grilled Chili Lime Chicken with Mango Jalapeno Salsa

This grilled chili lime chicken with mango jalapeno salsa is super delicious! It has tasty notes of slightly sweet, slightly spicy, savory, salty and a perfect touch of acidity from the lime that all work together to create a delicious flavor profile. The smokiness from a grill, smoker or pellet grill also help marry all these flavors together. You can also make this in the oven too if you don’t have a grill.

My kids love it without the salsa because the salsa has a little heat to it but the chicken by it’s self is super flavorful too. This chicken could also be chopped up and served in tacos, over a salad or rice and it would be delicious too!

I add a little pinch of sea salt at the end to really make all the flavors pop.

What you need to make grilled chili lime chicken with mango jalapeno salsa:

Serves 6 people

  • 6 chicken breasts
  • 1 tablespoon honey
  • 1 1/2 teaspoons salt – plus more for seasoning chicken
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1 1/2 tablespoons lime juice – about the juice from 1 lime
  • dash of cayenne pepper
  • 1/4 teaspoon black pepper

For mango jalapeno salsa:

  • 2 mangoes – peeled, cored and diced into chunks
  • 1/2 cup cilantro – chopped
  • 1/2 jalapeno – seeds removed and minced
  • 3 tablespoons lime juice – about 2 limes juiced
  • 1/4 teaspoon salt – more to taste
  • 1 tablespoon honey

Instructions

  1. Pre-heat grill to 400 F.
  2. In a bowl, add honey, salt, chili powder, garlic power, lime juice, cayenne pepper and black pepper and stir together into a glaze.
  3. Sprinkle chicken breast with salt and place on grill or smoker.
  4. Use a marinade brush to brush the sauce onto each chicken breast and let each side cook for about 10 minutes, then brush more sauce on and repeat until marinade is gone and chicken breasts are cooked through to 165 F. internal temperature. Mine takes about 40 minutes to cook through.
  5. To make the salsa, add all ingredients into a bowl and stir together. Taste and adjust salt to taste.
