These low carb sushi bites are the perfect snack, appetizer or meal for those who love sushi but don’t want the carbohydrates from the rice. Plus, they are also super quick and easy to make! I personally always feel like sushi but don’t always want the carbs so these make me so happy!
These are easy to make and come together quickly! No rice means you don’t have to cook the rice and that really saves time. The nori wrapper sticks perfectly to the cucumber and the other toppings will stack on top easily. I like to put the nori first, cream cheese square, imitation crab, avocado spicy mayo and french fried onions on top for a perfectly balanced bite. Add some soy sauce, eel sauce for drizzling on top with a side of wasabi for those who like the heat.
What you need to make low carb sushi bites:
Serves 4 as an appetizer, 2 as a main course
- 1 cucumber – peeled and cut into ~ 1/4 inch thick round slices
- 2 nori sheets -cut into a squares with scissors
- ~4 ounces cream cheese – cut into squares
- 3-4 sticks imitation crab – cut into chunks
- 1/2 avocado – diced
- ~3 tablespoons spicy mayo – for on top
- ~3 tablespoons french fried onions – for on top
- Optional – wasabi
- Optional- pickled ginger
Instructions
- Slice cucumbers into ~ 1/4 inch round slices, cut nori into squares, chunk up cream cheese, imitation crab, and dice avocado.
- Place the cucumber down first, then the nori wrapper shiny side up, followed by cream cheese, imitation crab, avocado, spicy mayo and french fried onions.
- Keep on chilled serving tray.
