Tomato, Basil and Feta Salad with a Balsamic Dressing

I could eat this tomato, basil and feta salad with balsamic dressing any day of the week and be a happy gal! I love how the flavors work together to create a symphony in the mouth!

This recipe sounds fancy but it couldn’t be simpler to make! It will take you about 5-10 minutes to make or even less. I always assume the time it would take someone who has never picked up a knife before when I state the estimated time it will take. This one is as fast as you can cut up 2 tomatoes, tear up some basil leaves and add things to a bowl.

I love to make this during the summer when I have fresh tomatoes straight from the vine and the basil comes from my garden too but that isn’t always an option so try to buy the best quality tomatoes when you make this for the best flavor, you won’t regret it.

What you will need to make this tomato, basil and feta salad with balsamic dressing:

Serves 2

  • 2 large tomatoes – chopped
  • 1/4 cup fresh basil or 2 tablespoons dried basil – lightly packed, roughly torn
  • 2 tablespoons feta – crumbled
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • 2 teaspoons honey – Equal amounts sugar can be used instead of honey

Instructions

  1. Add tomatoes and fresh basil to a bowl.
  2. In a small bowl, whisk together vinegar, olive oil and honey and pour over tomatoes and basil.
  3. Sprinkle with feta cheese and enjoy!
