I love this black bean salad for a few different reasons! First, it’s super delicious! Second, it comes together really quickly! Third, it’s very healthy and keeps me full! The black beans, tomatoes, salsa, peppers, spinach, red onion and oregano all taste great together! I add a cilantro lime vinaigrette or cilantro lime yogurt dressing and it really makes everything come together!
I have been cutting back on meats and saturated fats lately and this salad has been a go-to for me for a easy and healthy lunch. This recipe is vegan but you won’t miss the cheese or meats because the flavors all hold their own. You could add cheese and/or chicken or another protein if desired and it would taste great.
What you need to make black bean salad:
Serves 1-2 people (1 really hungry person or 2 moderately hungry people or serves 2 when served as a side dish)
- 3 cups loosely packed spinach – I usually just grab 3 hand fulls
- 1/2 avocado – chunked
- 1/4 cup red onion – diced
- 1/2 cup black beans
- 1/4 cup salsa
- 1 tomato – sliced
- 1/4 cup Anaheim chili pepper – diced
- 1 teaspoon dried oregano
- Cilantro lime vinaigrette, cilantro lime yogurt dressing or dressing of choice
Instructions for black bean salad:
- In a large bowl, add spinach, avocados, black beans, salsa, tomato, Anaheim chili peppers and sprinkle with dried oregano.
- Top with cilantro lime dressing or dressing of choice.
- Enjoy!
Simple cilantro lime dressing:
- 1 teaspoon dried cilantro or 2 tablespoons fresh cilantro – minced
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- 1/2 teaspoon sugar
- pinch salt
Instructions for simple cilantro lime vinaigrette:
- Whisk all ingredients together and pour over salad.
cilantro lime yogurt dressing:
- 1 teaspoon dried cilantro or 2 tablespoons fresh cilantro – minced
- 2 tablespoons lime juice
- 1 tablespoon plain Greek yogurt
- 1 tablespoon water or milk
- 1/2 teaspoon sugar
- pinch of salt
Instructions for cilantro lime yogurt dressing:
- Whisk all ingredients together, add more water to thin if desired and pour over salad.
