This gluten free pumpkin blender bread is super moist and delicious and has the most irresistible texture and flavors! With it’s pumpkin spice flavors it’s sure to become a fall favorite for years to come!
I used oats in this recipe along with gluten free baking mix because the oats give this bread a delicious chew and heartiness that makes this bread oh so yummy! My mom is gluten free and I have a few family members and friends that are as well so I always try to develop gluten free recipes for them and others to enjoy!
My children love this pumpkin bread! It’s sweet and decadent with pumpkin spice and cinnamon blending with the pumpkin flavors! You can keep this bread just a spice bread or you can add chocolate chips, I have added the option of chocolate chips as well as nuts below on the recipe.
This recipe is easy to make in a blender or in a food processor or even with an immersion blender. It’s a dump and mix kind of recipe and pretty fool proof. waiting for it to bake and cool is perhaps the hardest part because it will smell so delicious!
What you need to make gluten free pumpkin blender bread:
Makes 1 standard bread loaf
- 2 cups old fashion oats
- 1/2 cup gluten free baking mix
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup honey
- 3 eggs
- 1/4 cup butter – melted
- 1 cup milk
- 1 cup pure pumpkin puree
- 2 teaspoon pumpkin pie spice
- 2 teaspoon cinnamon
- 1/2 cup sugar
- optional – 1/2 cup chocolate chips
- Optional – 1/2 cup pecans or walnuts
Instructions
- Preheat oven to 350 F.
- In a blender or food processor add oats, gluten free baking mix, baking powder, salt, honey, eggs, butter, milk, pumpkin puree, pumpkin pie spice, cinnamon and sugar and blend or pulse until the batter is smooth and blended well.
- If adding chocolate chips and/or nuts, fold into batter.
- Grease a standard sized bread pan and pour batter in.
- Bake for 1 hour or 1 hour and 5 minutes. If top begins to brown, cover with aluminum foil to prevent burning on the top.
- Insert a toothpick into the center of the loaf and when it comes out clean it is cooked.
- Allow to cool completely before slicing.
- Enjoy!
