Corn and Chili Salsa

I love this corn and chili salsa! It lends some authentic and delicious flavors to any meal where you would add salsa and even on it’s own it tastes delicious! It’s easy to make and can be made using fresh corn off the cob, canned or frozen corn.

I use this corn and chili salsa on my tacos, salads, healthy baked chili rellenos and so much more. I also love to eat it with corn chips and mix it with some pico de gallo. It tastes great warm or cold.

What you need to make corn and chili salsa:

Makes ~1 and 1/2 cups

  • 1 tablespoon oil – I used corn oil
  • 1 cup corn
  • 4 ounce can of fire roasted chilies
  • 1 tablespoon cilantro – diced
  • 1 teaspoon lime juice
  • 1/4 teaspoon chili powder
  • pinch of salt
  • 1 tablespoon cojita cheese

Instructions

  1. In a pan, add oil, corn and fire roasted chilies and stir until corn cooks and starts to brown slightly.
  2. Remove from heat and add cilantro, lime juice, chili powder, salt and cojita cheese.
  3. Serve warm or cold.
