This apple and balsamic slaw is the perfect flavor combo to showcase the sweetness of the apple and earthiness of the cabbage along with a deep balsamic vinegar sauce and a great crunch from the sunflower seeds!
This may not be the prettiest slaw but it is delicious! It pairs well with pork or chicken as the main course, or you can even put it on a BBQ pulled pork sandwich and it will taste delicious. It is a vinegar based slaw so you the flavors are sharp, crisp and sweet.
What you need to make this apple and balsamic slaw:
Serves 4-6
- 2 cups shredded purple cabbage
- 1/2 cup shredded carrots
- 1 large apple – shredded
- 1/2 cup shredded celery
- 1/4 cup sunflower seeds
- 2 tablespoons olive oil
- 1/4 cup balsamic vinegar
- 1 tablespoon sugar
- pinch of salt – plus more to taste
- Pinch of black pepper
Instructions
- Prepare all vegetables and the apple and add to a large bowl then toss together.
- In another bowl, add olive oil, balsamic vinegar, sugar, salt and pepper and whisk together.
- Pour over the slaw along with the sunflower seeds and give it a good toss.
- Serve chilled.
