Cucumber salad is the perfect refreshing summer salad! It’s super easy to make and has the best sweet, sour, tangy and salty flavors! It’s super easy to make and makes for the perfect side dish or appetizer.
This salad can be made ahead of time and is best served cold. You can leave out the feta if you aren’t a fan of it and it’s still delicious. You can also use another vinegar if you don’t have red wine vinegar on hand but I do love the subtle sweetness and flavor from red wine vinegar.
What you need for this cucumber salad:
Serves 2-3 people
- 1 large cucumber – thinly sliced
- 1/2 cup red onion – thinly sliced
- 1/4 cup red wine vinegar
- 2 tablespoons olive oil
- 2 teaspoons honey
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons feta – crumbled
Instructions
- Slice cucumber and red onion thinly and add to a serving bowl.
- In another small bowl, add red wine vinegar, olive oil, honey, salt and pepper and whisk together.
- Pour over the cucumber and red onion and stir.
- Sprinkle feta on top.
