If you have ever tried swapping regular noodles out for squash or other vegetables, you know how delicious they can be! This garlic basil chicken and butternut squash noodles recipe is a great recipe to do that with. It’s hearty and homey, yet clean and protein packed.
I love the simple combo of garlic, basil and Parmesan and when you add the chicken and butternut squash the whole dish becomes both delectable and healthy!
You can make your own butternut squash noodles if you have a zoodle maker or even a food grater or food processor with a grating attachment. I like to skip the prep step and just buy mine pre shredded from the store. Trader Joe’s sells them as well as other grocery stores in the refrigerated vegetable section.
What you need to make garlic basil chicken and butternut squash noodles:
Serves 2-3 people (2 really hungry adults)
- 10.5 ounces or ~3 cups butternut squash noodles
- 1/2 cup water
- 2 teaspoons olive oil
- 4 cloves garlic- minced
- 1 large tomato – diced
- 1/4 cup fresh basil – sliced thinly OR 2 tablespoons dried basil
- 2 tablespoons Parmesan cheese – /plus more for on top
- 1 chicken breast – cooked or rotisserie chicken – diced
- salt and pepper to taste
Instructions
- In a large pan, add butternut squash noodles and water to pan.
- Bring mixture to a boil, cover and cook for 5 minutes.
- Add olive oil, garlic and tomato and stir.
- Cook for 3-4 minutes.
- Add fresh basil, Parmesan cheese and chicken breast and stir well.
- Top with more basil if desired and more Parmesan cheese and salt and pepper to taste.
- Enjoy!
