Sugar Cookie Tart

This sugar cookie tart is filled with vanilla pudding and topped with berries! It’s delicious and decadent and surprisingly not too hard to make. The crust is buttery and gets almost caramelized when it bakes giving it a rich and delicious flavor!

I like to use instant vanilla pudding in this tart because I think it tastes similar to pastry cream and takes a fraction of the time to make. However, pastry cream is a little more traditional so you can use that too. Also a lemon curd and pastry cream filling would be incredible in this shell. The acidity would balance perfectly with the decadence of the sugar cookie shell.

However you do fill this tart it will taste amazing! So lets get to the recipe so you can get going!

What you need to make this sugar cookie tart:

Makes 1 6-9 inch tart – The dough will fill a 9 inch tart but you could use a 6 inch and have some extra dough or make a thicker crust.

For the crust:

  • 1/2 cup butter – on the firmer end of room temperature
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract or flavoring
  • 1 1/4 cups flour

For filling:

  • 1 large package of instant vanilla pudding – follow directions for a pie filling
  • OR
  • 3 cups pastry cream
  • Fresh berries or fruit

Instructions

  1. Preheat oven to 350 F.
  2. In a mixing bowl, add butter and sugar and cream until blended.
  3. Add salt, vanilla and flour and mix until a cookie dough forms.
  4. Grease tart shell.
  5. Roll out the dough to desired thickness and place in a tart shell, press into shell as best you can.
  6. Take a knife and run it around the edge so you have a smooth edge.
  7. Place parchment paper on the inside of the shell and fill with dried beans or baking stones to prevent the tart shell from shrinking.
  8. Bake for 15 minutes.
  9. Remove the beans and parchment paper and bake for another 5-7 minutes.
  10. Let the shell cool thoroughly.
  11. Mix together the pudding and pour into cooled tart shell.
  12. Top with fresh fruit, let pudding set and enjoy!
