It’s summer and if you are like me you love a easy, no bake dinner option. This chicken salad sandwich is a great option for that! It’s full of flavor and only takes a few minutes to prep!
You can eat this salad on a croissant, bread, bun or use it in a lettuce wrap if you are going for a low carb approach. You could also put this over a salad or on it’s own.
I love to use rotisserie chicken for this recipe but a canned chicken or any cooked chicken will work. The convenience of rotisserie or canned chicken makes these super easy and quick to make!
What you need to make chicken salad sandwich:
Serves 2-3 people
- 1 cup chicken – cooked and chopped, I love using rotisserie chicken breast
- 1/4 cup celery – diced
- 3 tablespoons mayonnaise
- 2 tablespoon dried cranberries
- 1 green onion – diced
- 1 teaspoon sugar
- 1 teaspoon vinegar
- pinch of salt
- pinch black pepper
- Optional – 1 tablespoon chives or 1 teaspoon dried chives
- 2-3 croissants or bread for 2-3 sandwiches
Instructions
- Add diced chicken, celery, mayonnaise, cranberries, sugar, vinegar, salt, black pepper and chives to bowl and mix well.
- Spoon onto cut croissant or bread.
- Enjoy!
