Herbs De Provence Potato Wedges

These herbs de Provence potato wedges are perfectly crispy on the outsides, tender on the inside and bursting with herby goodness. They are simple to make and are the perfect side dish to a fancy meal or casual dinner.

My daughter loved these and couldn’t stop eating them. She said she loved the “spiciness” but what she meant was the herbs that seems to pop in your mouth. They are great on their own or dipped in any of your favorite dips, a garlic aioli or mayonnaise based dip would taste great with these.

What are herbs de Provence?

Herbs de Provence is a blend of savory herbs, including rosemary, fennel, thyme, basil, marjoram, lavender flowers, parsley, oregano, tarragon and more, depending on the spice blend you buy or if you make your own. It’s flavorful and delicious. The first time I used it I was worried about the lavender flowers being over powering but they really just lend the perfect flavor.

What you need to make herbs de Provence potato wedges:

Instructions

  1. Preheat oven to 425 F.
  2. Wash and pat dry potatoes.
  3. Slice into wedges.
  4. Toss in olive oil.
  5. Lay flat on a greased or lined cookie sheet.
  6. Sprinkle with salt, onion powder and herbs de Provence.
  7. Bake for 40-45 minutes, flipping over at 30 minutes.
  8. Remove from oven and sprinkle with more salt if desired.

  • 5 medium Russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt – more or less depending on your saltiness preference
  • 1 teaspoon onion powder
  • 1 teaspoon herbs de Provence
