This red miso buttered cod makes the perfect healthy and flavorful dinner or main course! It’s easy to make and tastes delicious. The miso and sesame work well with this tender and hearty fish. Though the seasoning is not over powering at all and it really compliments the cod.
Miso is a type of fermented soy bean paste. It comes in a few different varieties and all varieties will work with this recipe. I prefer to use a red miso paste. I find my miso paste at an Asian foods market but some grocers carry it as well. It is in the refrigerator section.
You can use fresh or frozen cod for this recipe, the cooking time will vary slightly but taste should be the same. I always have frozen fish on hand for quick and easy dinners so most of the time I use frozen fillets.
Update: This dish is subtle and delicate with it’s miso flavoring, If you wish to add more miso flavor I would suggest making the miso glaze that I have added to this recipe and adding it over your fish. The dish is delicious with or without the added glaze.
What you need to make red miso buttered cod:
serves 2
- 2 cod fillets – fresh or frozen, I like wild caught Atlantic cod
- 1/2 cups water
- 2 teaspoon red miso paste
- 1 teaspoon black or toasted sesame oil
- 3 cloves garlic – peeled but whole
- 1 tablespoon butter
- pinch of salt
- pinch of pepper
Red Miso Glaze (optional)
- 2 teaspoons red miso paste
- 1/3 cup water
- pinch of salt
- pinch of pepper
- pinch sugar
- 1/4 teaspoon garlic powder
- 1 teaspoon corn starch
Instructions
- Mix together the water, red miso paste and sesame oil together.
- In a medium pan, add whole garlic’s and butter.
- Heat butter over medium heat and cook garlic in the butter until the garlic’s start to get golden, then remove them from the pan.
- Season cod fillets with a pinch of salt and pepper per fillet.
- Add to the hot butter and sear on each side for roughly 1 minute per side.
- Add the miso and sesame oil mixture and simmer for roughly 4-6 minutes, this will depend if your fish is fresh or frozen.
- Turn fish over half way through.
- Once liquid starts to evaporate. sear each side with the reduced liquid and when fish is tender yet flaky, remove from heat and serve, add glaze if desired.
To make red miso glaze:
- Add all ingredients to a sauce pan and whisk over medium heat until sauce comes to a boil and thickens slightly.
- Add over fish.
