I love a good and easy potato side dish and these ranch red potatoes are just that,super easy and delicious! They have the perfect little zing to them and they get nicely roasted and slightly caramelized which makes them a perfect side dish to any meal!
I love the skins left on these, it adds to the chewy, caramelized texture of these, plus it keeps the nutritious part of the potato attached. The red potato skin is thin, soft and tastes great!

What you need to make ranch red potatoes:
serves 6
- 2 pounds red potatoes – washed and diced, skins left on
- 3 tablespoons olive oil
- 1 package ranch seasoning
- 1 teaspoon salt – plus more to taste
Instructions
- Preheat oven to 425 F.
- Wash and chunk up the red potatoes in bite size pieces, leave the skins on.
- Lay the diced potatoes on a baking sheet with parchment paper or silicone baking mat under them.
- drizzle tops with olive oil, then sprinkle ranch seasoning on tops, followed by salt.
- Toss the potatoes around so they are evenly coated.
- Bake for 40 minutes, flipping over after cooking for about 30 minutes.
- Sprinkle with salt.
- Enjoy!
