Cake Mix Thin Mint Cookies

These easy cake mix thin mint cookies are super delicious and really quick to make! Perfect for after school snacks, parties, bake sales or when you have a craving for mint and chocolate!

Any cake mix brand will work for these and you can use chocolate or devils food cake mix. I recommend devils food cake mix for a darker and richer chocolate cookie but really whatever you have on had will work!

What you need to make cake mix thin mint cookies:

makes 20 cookies

For white chocolate mint topping:

Instructions

  1. Pre-heat oven to 375 F.
  2. Mix together the cake mix, eggs and oil.
  3. Spoon onto a greased cookie sheet.
  4. Allow room for the cookies to spread.
  5. Bake for 8-10 minutes.
  6. While cookies cool, microwave the white chocolate in 15 second intervals, stirring after each time, until chocolate is melted and smooth.
  7. Add peppermint and food coloring.
  8. Spread warm white chocolate over the tops of the cookies.
  9. Let white chocolate set then serve.

  • 2 cups white chocolate chips or 1 bag
  • 1/4 teaspoon peppermint oil or 1/2peppermint extract
  • a few drops green food coloring
