This ham and asparagus frittata is simple to make but turns out elegant, fancy and delicious. The flavors of the ham and asparagus work so well together and the egg is nice and fluffy. This frittata is perfect to make ahead of time for brunches, lunches, dinners or future breakfasts. It can easily be reheated and still tastes great!
This recipe is lower carbohydrates too so it’s perfect for a protein packed meal with little carbohydrates. Since I try to watch my blood sugar levels this dish is a staple recipe! Everyone needs a good frittata in their life!
What you need to make ham and asparagus frittata:
serves 4
- 9 eggs
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced ham
- 1/3 cup cheddar cheese – grated
- 7 spears asparagus – boiled or roasted before cooking so they are slightly softened then sliced in half lengthwise
Instructions
- Pre-heat the oven to 400 F.
- Prepare the asparagus by boiling briefly so the asparagus softens slightly then slice in half lengthwise.
- In a bowl, add the eggs, milk, salt and black pepper and whisk together.
- Add the diced ham and cheese and stir again.
- Pour into a greased round baking pan, 8-12 inches will work, bigger pan means shorter cook time, smaller means longer.
- Add sliced asparagus on top of egg mixture.
- Bake for 20 minutes for a 12 inch pan to ~40 minutes for a 8 inch pan or until the centers are set and not liquidy.
- Remove from oven, allow to cool slightly then enjoy!
