This zucchini taco bowl is super delicious, lower in carbohydrates and will leave you feeling full and satisfied. I used grilled zucchini as the base for a tasty and easy healthy dinner. If you love tacos or taco salad, you will love this recipe.
The grilled zucchini is more filling than when I eat this with tortilla chips alone, so it’s more bang for your calorie and carb buck. Which I am always happy about. Sometimes I add a few crushed corn chips to enhance the authentic masa corn flavor to the dish.
What you need to make a zucchini taco bowl:
serves 4
- 4 medium zucchini
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 teaspoon onion powder
- 1/2 teaspoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1 teaspoon salt
- 1 onion – diced
Optional toppings
- shredded cheese
- salsa
- cilantro
- sour cream
- guacamole
Instructions
- Add zucchini to a large saute pan, sprinkle with a little salt and cook until they are softened and slightly browned.
- Season the ground beef with the onion powder, cumin, garlic powder, chili powder, salt, and add the diced onion.
- Cook until the beef is cooked and the onions are softened.
- Add the grilled zucchini on bottom, followed by the ground beef and onion mixture.
- Add the cheese, salsa, cilantro, sour cream and guacamole.
- Enjoy!
