Zucchini Taco Bowl

This zucchini taco bowl is super delicious, lower in carbohydrates and will leave you feeling full and satisfied. I used grilled zucchini as the base for a tasty and easy healthy dinner. If you love tacos or taco salad, you will love this recipe.

The grilled zucchini is more filling than when I eat this with tortilla chips alone, so it’s more bang for your calorie and carb buck. Which I am always happy about. Sometimes I add a few crushed corn chips to enhance the authentic masa corn flavor to the dish.

Instructions

  1. Add zucchini to a large saute pan, sprinkle with a little salt and cook until they are softened and slightly browned.
  2. Season the ground beef with the onion powder, cumin, garlic powder, chili powder, salt, and add the diced onion.
  3. Cook until the beef is cooked and the onions are softened.
  4. Add the grilled zucchini on bottom, followed by the ground beef and onion mixture.
  5. Add the cheese, salsa, cilantro, sour cream and guacamole.
  6. Enjoy!
