I love Greek chicken salad! This one is filled with chicken, lettuce, veggies, olives, oregano, pepperoncini peppers and feta so basically all of the Greek flavors I love! It’s filling and makes a full meal! I love to eat it for lunches because it can be meal prepped ahead of time and just keep the salad dressing on the side.

What you need to make Greek Chicken Salad:
Serves 1
- 2 cups Red leaf lettuce
- 6 black olives
- 2 mini bell peppers- sliced
- 1/2 cucumber
- 1/2 cup cherry tomatoes
- 1 green onion – diced
- 2 tablespoons feta
- 3 tablespoons pepperoncini peppers – sliced
- 1 radish – sliced
- 1/2 cup rotisserie chicken – diced
- 1 teaspoon dried oregano
- ~ 3 tablespoons Greek salad dressing – more or less depending how much dressing you like.
Instructions
- Prep all vegetables and chicken, add to a bowl.
- Add salad dressing and mix.
- Enjoy!
*Can be made ahead of time, reserve the salad dressing for when you are ready to serve.
