Peanut Butter Chocolate Chip & Cashew Cookies

Peanut Butter chocolate chip & cashew cookies with sea salt sprinkled on top. These are super delicious and fairly healthy for you too (nutritional information is below)! Peanut buttery, chocolaty and the perfect crunch and nuttiness from the cashews.

I like to make these for Sundays to hit my “chocolate chip and everything delicious” craving that always seem to come on Sundays.

What you need to make Peanut Butter Chocolate Chip & Cashew Cookies:

Makes ~21 cookies

  • 1/3 cup almond flour
  • 1/3 cup coconut flour
  • 2/3 cup flour or gluten free baking flour
  • 1/2 tsp sea salt 
  • 1 tsp baking soda
  • 1/2 cup coconut sugar
  • 1/3 cup brown sugar
  • 1/3 canola oil 
  • 1/4 cup peanut butter 
  • 1 tsp vanilla
  • 1/3 cup chocolate chips
  • 1/4 cup cashews
  • Extra sea salt to sprinkle on top after baking. 

Instructions

  1. Preheat oven to 375 F.
  2. Makes ~20 cookies.
  3. Mix oil and sugars.
  4. Add the eggs, peanut butter and vanilla.
  5. In separate bowl combine flours, baking soda and salt.
  6. Pour the dry ingredients into the wet and mix.
  7. Add chocolate chips and cashews.
  8. Make 1 tablespoon balls.
  9. Bake for ~7 minutes.
  10. Sprinkle with sea salt on top after.
