Honey Mustard Chicken Salad

This honey mustard chicken salad is full of fun flavors and textures and it will fill you up with goodness. The grilled honey mustard chicken has a light glaze and adds just enough sweetness and flavor to the chicken tenders. The strawberries add some juicy sweet berry fun to the mix. The mushrooms give you a fun texture and some earthiness and the cucumbers,pumpkin seeds give this salad a crunchy element. The poppy seed dressing just brings everything together. This salad is perfect for spring and summer.

Instructions

  1. Sprinkle chicken tenders with salt, pepper and garlic powder.
  2. Mix together the mustard and honey.
  3. Grill chicken tenders for a few minutes on each side then brush chicken breasts with mustard and honey mixture on each side.
  4. Continue cooking until chicken tenders are cooked through.
  5. Add all of the salad ingredients to a bowl, I like to just lay them all on top of the mixed greens but you can mix it ahead of time.
  6. Slice chicken tenders and add on top.
  7. Serve with poppy seed dressing or strawberry poppy seed dressing.
  8. Enjoy!

  • 1 pound chicken tenders
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon Dijon mustard
  • 2 tablespoons honey
  • 1/2 teaspoon garlic powder
  • For the salad:
  • 8 cups mixed greens
  • 1 pound cooked honey mustard chicken tenders
  • 1 cup strawberries - sliced
  • 1 cup baby Bella mushrooms - sliced
  • 2 green onions - sliced thinly
  • 1 cucumber - sliced
  • 1/2 cup feta cheese
  • 1/4 cup raw pumpkin seeds
  • 1/2 cup strawberry poppy seed dressing or poppy seed dressing
