I love red pepper hummus and so does my daughter. It’s her favorite! I love roasted red bell peppers in general and when it’s added to hummus it’s delicious! This homemade red pepper hummus is super easy and is super tasty. I love it with crackers and vegetables or as a spread on sandwiches. It only takes a few ingredients and comes together in less than 5 minutes.
My recipe does not use tahini because I found it tastes just as delicious without it. I do love tahini but this recipe doesn’t need it. You can of course add it if you are used to using it, I would add 1 tablespoon of tahini.
What you need to make red pepper hummus:
makes ~1 and 1/2 cups
- 1 – 15 ounce can Garbanzo beans or chickpeas – drained and rinsed
- 1/2 teaspoon salt
- 1/4 cup roasted red bell pepper – I use jarred but you can make your own.
- 5 tablespoons olive oil
- dash garlic powder
- 1 tablespoon lemon juice
- 1 tablespoon diced roasted red bell pepper for on top
- olive oil for on top
Instructions
- Drain and rinse the garbanzo beans and if you want really smooth hummus, remove the skins from each bean. If you don’t mind a little texture, then leave them on.
- Add garbanzo beans to a blender or food processor.
- Add salt, roasted red bell pepper, olive oil, garlic powder and lemon juice.
- Blend and pulse until it’s smooth.
- Add diced red bell pepper on top and drizzle with some olive oil.
- Enjoy!
