Homemade Twix Bars

These homemade twix bars are super delicious and the whole family will love them! The bottom is a buttery shortbread cookie, topped with creamy salted caramel and then milk chocolate on top! If you have twix lovers in the house they will love these.

The homemade caramel is easy to make! The perfect cook can be achieved by doing the ice water test. That is where you fill a cup with ice water and during the cooking process drop a small spoon full of hot candy into the water. Feel the caramel with your fingers to see what the caramel feels like. What you need to make homemade twix bars:

Makes 1 – full cookie tray or ~24 large squares

For the shortbread cookie:

  • 1 cup butter – softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups flour

Instructions:

  1. Preheat oven to 350 F.
  2. Mix butter, sugar and vanilla until a creamy pale yellow.
  3. Mix salt and flour into the butter mixture.
  4. Roll out the dough into a large rectangle that is about 1/2 inch thick, roll out on a parchment paper lined cookie sheet. Dough will fill the 3/4th of a traditional sized pan.
  5. Bake for 20 minutes.
  6. Let cookie cool and make the caramel.

For the caramel and chocolate topping:

  • 1/2 cup salted butter
  • 2 cups sugar
  • 1 cup corn syrup
  • 1 cup whipping cream
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 2 cups milk chocolate chips

Instructions for the caramel:

  1. In a heavy bottomed sauce pan, add butter, sugar, corn syrup and heat on medium heat stirring continuously so sugar doesn’t burn on the bottom.
  2. Once butter and sugar start to melt, whisk in the cream and salt.
  3. Bring mixture to a boil then simmer.
  4. Cook to the soft ball stage or 235 F.
  5. Stir in vanilla at this point and remove from heat.
  6. Pour over your shortbread cookie.
  7. Let caramel sit for a few minutes or until the top start to harden.
  8. Add chocolate chips on top and let sit for a few minutes until chocolate chips are melted. If they are not melting, place in a warmed oven for 2-3 minutes.
  9. Once melted use a frosting spatula to spread the chocolate smoothly over the top.
  10. Chill until chocolate is set.
  11. Slice into bars and enjoy!

Instructions
