This Cuban mojo sauce is great to slow cook pork roast in and shred or to use on any other meat like pork, beef or chicken. It’s a orange and lime based sauce that has a herby element from the bay leaves, oregano and cumin. It also has savory elements from the garlic and chili powder. it comes together in about 5-8 minutes so it’s a great idea for a quick and flavorful sauce.

What you need to make Cuban mojo sauce:
makes ~1/2 cup sauce
- 2 tablespoons garlic – minced
- 1 tablespoon olive oil
- 1 cup orange juice – no pulp
- 2 tablespoons lime juice
- dash of cayenne pepper
- 1 teaspoon dried oregano
- 1 bay leaf
- 1/2 teaspoon cumin
- 1/8 teaspoon black pepper
- 1 teaspoon salt
- 1/8 teaspoon chili powder
- 2 tablespoon sugar
- 1 tablespoon water
- 1 tablespoon cornstarch
Instructions
- In a sauce pan, add garlic and olive oil and saute for 1 minute on medium high heat.
- Add orange juice, lime juice, cayenne pepper, dried oregano, bay leaf, cumin, black pepper, salt, chili powder and sugar.
- Simmer the sauce for 3 minutes or until it is reduced by nearly half.
- In a small bowl, combine water and cornstarch and whisk into sauce.
- Remove from heat once the sauce starts to thicken.
