Chocolate Birthday Cake

This chocolate birthday cake is like the ultimate chocolate lovers birthday cake! Filled with lots of chocolate and nostalgic birthday cake flavors! It’s moist and the perfect cakey texture that you will love! Plus, it can be made with no mixer, just a bowl and a mixing spoon. You can of course use your mixer too, if you have one on hand. The point is this is a dump and stir kind of cake.

Did I mention it is full of chocolate! Tastes almost like a brownie in cake form. It is super soft and moist and you will love it!

What you need to make chocolate birthday cake:

Makes 1 large 9 X 13 cake or 2 – 9 inch round cakes.

For the chocolate cake:

  • 1 cup butter
  • 2 1/2 cups semi- sweet chocolate chips – divided
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 3 egg yolks
  • 1 tablespoon vanilla
  • 2 cup flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups milk
  • 1 tablespoon lemon juice

For the chocolate butter cream frosting:

  • 1/2 cup butter
  • 3 cups powdered sugar
  • pinch of salt
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla
  • 3 tablespoons milk

Instructions:

  1. Pre- heat oven to 350 F.
  2. Add milk and lemon juice to a bowl and set aside.
  3. In a Microwave safe bowl, add butter and cook for 1 minute or until the butter is melted and hot.
  4. pour 2 cups of chocolate chips into the butter.
  5. Stir and let sit for 1 minute.
  6. Chocolate chips should start to melt.
  7. Microwave the butter and chocolate for 30 second intervals until the chocolate is melted.
  8. Add brown sugar and white sugar to melted chocolate and butter mixture.
  9. Add eggs, egg yolks and vanilla and blend until smooth.
  10. In another bowl, combine flour baking soda, baking powder, and salt.
  11. Stir well.
  12. Add the flour mixture to the butter and chocolate mixture, along with the milk and lemon juice mixture and stir together.
  13. Pour batter into greased cake pans.
  14. Sprinkle the remaining 1/2 cup chocolate chip on top of cake batter.
  15. Bake for 40-43 minutes or until a toothpick comes out clean.
  16. For 2 – 9 inch round cakes bake for 25 – 28 minutes or until a toothpick comes out clean.

For the chocolate frosting:

  1. Add softened butter, powdered sugar, salt, cocoa powder, vanilla and milk and whisk until smooth.
  2. Frost cake when it’s cooled.
