Healthy blueberry blender muffins! These are healthy, delicious and easy peasy! You make them in your blender, so it’s a throw in and blend kind of recipe. They can be easily made gluten and dairy free when you use gluten free baking mix and non-dairy milk of choice!
What you need to make healthy Blueberry blender muffins:
makes ~ 24 muffins
- 1 and 1/2 cups dry steel cut oats
- 1 cup almond flour
- 1/2 cup flour or gluten free baking mix
- 2 eggs
- 1 tsp baking soda
- 1 tsp lemon juice
- 2 cups milk of choice
- 1/4 cup brown sugar
- 1/2 cup stevia
- 1 tsp salt
- 1 cup blueberries
Instructions
- Pre-heat oven to 350 F.
- Add steel cut oats, almond flour, flour or gluten free baking mix, eggs, baking soda, milk, brown sugar, stevia, salt and lemon juice to the blender and blend until smooth.
- Place muffin liners into a muffin tin.
- Pour the batter into each muffin tin and add ~ 4-5 blueberries on top of the batter and slightly pressed into the batter.
- Bake for 20 minutes.
