This fruit fiesta frozen yogurt cake tastes like a smoothie bowl in Popsicle form with a no bake banana almond crust on the bottom. It’s refreshing and tasty. This can be made without a frozen yogurt or ice cream machine. Though if you do have one the layers will be slightly smoother but it is not necessary, I don’t use my ice cream maker for this.
To make this fruit fiesta frozen yogurt cake:
serves 6 people
Banana crust:
- 1 banana
- 1/2 cup almond flour
- 2 tablespoons honey
- 1/2 teaspoon vanilla
- Pinch of salt
For the mango frozen yogurt layer:
- 1 cup mango chunks – frozen
- 1/2 cup vanilla yogurt
- 1 tablespoon honey
- 1/2 teaspoon lemon juice
For the Strawberry frozen yogurt layer:
- 1 cup frozen strawberries
- 1/2 cup strawberry yogurt
- 1 tablespoon honey
- 1/2 teaspoon lemon juice
For the triple berry frozen yogurt layer:
- 1 cup frozen triple berry mix
- 1/2 cup blueberry yogurt
- 1 tablespoon honey
- 1/2 teaspoon lemon juice
Fruits for on top:
- Mango
- Strawberry
- Kiwi
Instructions
- Line a bread pan with parchment paper or plastic wrap on bottom and up the all sides of the pan.
- Blend banana, almond flour, honey, vanilla and salt together until a wet dough forms. Pour dough into a cookie sheet and press down evenly across the bottom of the pan.
- Blend together the mango frozen yogurt ingredients in a blender until smooth and pour on top of the banana portion and place in the freezer.
- Blend together all of the strawberry frozen yogurt together in a blender and add on top of the mango portion. Do spoon fulls across the top of mango portion so the two don’t mix. It’s fine if they do, the layers just won’t be as defined. Place bread pan back into the freezer.
- Blend the triple berry frozen yogurt ingredients in the blender until smooth and add on top of the strawberry. Using spoonfuls across the top them smoothing it out so the layers don’t mix too much.
- Freeze for 2-3 hours so the frozen yogurt cake is Frozen.
- Remove from freezer and thaw for a few minutes then slice into desired servings.
- Top with fresh chopped fruits and enjoy.
