This orange flavored olive oil cake is simple and rustic, yet sophisticated and the flavors are subtle but complex. I love this combination and it isn’t over the top sweet but just the right amount. The texture is also soft and cakey but also kind of chewy on the edges from the olive oil. The cake does not rise much, in fact if your cake sinks slightly in the middle it’s all good. It is all a part of the cakes charm.
You can add a fresh cut orange or clementine on top and drizzle with honey to sweeten things up.
Here is what you need to make Orange Olive Oil Cake:
Makes 1 – 8-9 inch round cake or 1- 8 x 8 cake or 8 standard cupcakes or 9 doughnuts.
- 2/3 cup flour
- 2/3 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 6 drops of orange oil or 1 teaspoon orange flavoring
- 1/2 cup olive oil
- 1 teaspoon vanilla extract
- 1 egg
- 1/4 cup milk
- 1 tablespoon orange juice
- 1 teaspoon orange zest
Instructions
- Preheat oven to 350 F.
- Grease pans then dust pans with flour, tip pan upside down and tap to remove excess flour.
- In a small bowl, combine flour, sugar, baking powder and salt and stir together.
- Add orange oil, olive oil, vanilla, egg, milk, orange juice and orange zest and whisk together until a smooth batter forms.
- Pour batter into greased and floured pans.
- Bake 8-9 inch round cake and 8 x 8 square cake ~18-20 minutes or until a toothpick can be inserted and comes back out clean. Note this cake does not rise a lot, it will stay pretty much flat when fully baked.
- Bake cupcakes ~10-12 minutes.
- Bake doughnuts for ~8-9 minutes.
