Olive Oil Cake, Strawberries and Sweet Balsamic Glaze

If you have never tried balsamic vinegar in a dessert than you are missing out! It gives the perfect little bite and balance! This olive oil cake, strawberries and sweet balsamic glaze recipe is fancy and complex yet completely simple to make and everyone loves it! The way the olive oil, lemon, strawberries, balsamic vinegar and vanilla ice cream all work together is magic!

What you need to make olive oil cake, strawberries and sweet balsamic glaze:

Makes 1 – 8-9 inch round cake or 1- 8 x 8 cake or 8 standard cupcakes or 9 doughnuts.

For the lemon olive oil cake:

  • 2/3rds cup flour 
  • 2/3rds cup sugar 
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt 
  • 6 drops of lemon oil or 1 teaspoon lemon flavoring 
  • 1/2 cup olive oil
  • 1 teaspoon vanilla extract 
  • 1 egg
  • 1/4 cup milk
  • 1 tablespoon lemon juice

Topping:

  • 8-10 fresh strawberries – sliced

Sweet balsamic glaze:

  • 1 cup powdered sugar
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon water
  • 1/2 teaspoon vanilla
  • pinch of salt
  • 1 teaspoon butter – melted

Instructions

  1. Preheat oven to 350 F. 
  2. Grease pans then dust pans with flour, tip pan upside down and tap to remove excess flour. 
  3. In a small bowl, combine flour, sugar, baking powder and salt and stir together. 
  4. Add lemon oil, olive oil, vanilla, egg, milk and lemon juice and whisk batter together until a smooth batter forms.
  5. Pour batter into greased and floured pans. 
  6. To bake 8-9 inch round cake and 8 x 8 square cake ~18-20 minutes or until a toothpick can be inserted and comes back out clean. 
    Note this cake does not rise a lot, it will stay pretty much flat when fully baked.
  7. Bake cupcakes ~10-12 minutes. 
  8. Bake doughnuts for ~8-9 minutes.

Instructions for sweet balsamic glaze:

  1. Add all ingredients to a small bowl and whisk until smooth,

Assembly:

  1. Slice strawberries.
  2. Top lemon olive oil cake with strawberries and drizzle sweet balsamic glaze over the top. Add ice cream and you are in business!
