Easy Red Velvet Cake Mix Sandwich Cookies

Growing up cake mix cookies were the best recipe ever at our house because they were easy and inexpensive to make. We made them all of the time! These easy red velvet cake mix cookies are super easy to make and taste amazing! They have the perfect chewy texture. The filling is a cream cheese marshmallow filling that perfectly pairs with the red velvet flavor!

These cookies look fancy and maybe a little intimidating to a non-baker but I promise you that anyone can make these! They are about as fool proof as a baking recipe gets when you add all of the ingredients and don’t over bake them. Set a timer to prevent that and lay out all of your ingredients before you start baking to prevent missing something.

Make these into hearts by cutting the baked cookie with a heart cookie cutter. Makes for a fun valentines treat!

Another thing I love about using red velvet cake mix in these cookies is that it does not have a red food coloring flavor. Making things from scratch with red food color can often give it a bitter flavor when you use gel or other food colorings. This cake mix has been tested already so it takes out the guess work for you as the baker!

These can easily be cut out into any desired shape, I cut them into hearts for valentines day. You bake the cookie and while they are cooling down and still on the cookie sheet, you use your cookie cutter of choice to cut out your desired shape. My kids love to eat the remnants and I use some of them to crumble up and sprinkle on the sides like a traditional red velvet.

The marshmallow cream cheese frosting is delicious and easy to make! Make sure your cream cheese is room temperature to ensure you don’t end up with any lumps. This frosting also goes a long way, just a small dollop between cookies will work great, below I over filled the cookies and it made them a bit messy, extra delicious but messy. If you are a triple stuffed kind of person then go for it!

Here is what you need to make easy red velvet cake mix sandwich cookies:

makes ~15 sandwich cookies

For the red velvet cookies:

  • 1 red velvet cake mix
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 tablespoon milk

For the frosting:

  • 2 ounces cream cheese – softened
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract
  • pinch of salt
  • 2 cups powdered sugar
  • 4 ounces marshmallow creme

Instructions:

  1. Preheat oven to 350 F.
  2. Combine cake mix, vegetable oil, 3 eggs and milk and stir until a smooth batter forms.
  3. Spoon about 1 tablespoon of batter onto a greased or parchment paper lined cookie sheet. Allow room for the cookies to spread slightly.
  4. Bake for 9-10 minutes.
  5. If cutting the cookies into shapes, once the cookies have been removed from the oven, use a cookie cutter to cut out desired shape then move to a cooling rack.
  6. To make the frosting, add cream cheese, milk, vanilla, salt and powdered sugar and blend until smooth.
  7. Gently fold in the marshmallow creme until all is incorporated and frosting is smooth.

This batter is going to be wet, it’s ok, so just go with it!
