This warm balsamic zucchini noodle salad is really quick to make and tastes great! It’s packed with vegetables and great for a healthy hearty weeknight dinner.
I love to eat this meal when I am craving a warm comforting meal but want to keep it veggie packed. You can also add noodles to the dish if you want it even more filling.
What you need to make warm balsamic zucchini salad:
serves 1-2 people
- 1 small zucchini – sliced into long thing strips
- 1/2 small onion – diced
- 1 teaspoon olive oil
- sprinkle of salt
- 1 cup tomatoes
- 2 tablespoons feta cheese crumbles
- 1 tablespoon balsamic vinegar
Instructions
- In a pan, add zucchini, onion, olive oil, salt and tomatoes .
- Saute over medium heat until vegetables start to soften.
- Add balsamic vinegar and stir.
- Sprinkle feta in and stir. Feta will melt with the balsamic vinegar and create a creamy sauce.
- remove from heat and serve.
