This sweet potato curry is super comforting and delicious! It qualifies for my ugly but delicious category because it’s not a pretty dish. However the flavors are bold and tasty! It’s also full of healthy vegetables and is easy to make. I created this recipe when my in-law were coming to visit. They loved this sweet potato curry and so do we!
What you need to make this sweet potato curry:
serves 6
- 2 tablespoons olive oil
- 1 onion – diced
- 3 large carrots – chopped
- 2 medium sweet potatoes – chopped into small chunks
- 1 red bell pepper – diced
- 1- 14.5 ounce can diced tomatoes
- 1-1/2 teaspoons salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1 tablespoon red curry powder
- 1 teaspoon garam masala,
- 3 cups water
- 1 can coconut milk
- rice to curry serve over
Instructions
- Add olive oil to a large pan, followed by onions, carrots, sweet potatoes, and bell peppers.
- Saute on medium-high heat until onions and other vegetables brown slightly.
- Add diced tomatoes, salt, pepper, garlic powder, curry powder and garam masala and stir.
- Add water, coconut milk and bring mixture to a boil then reduce to a medium simmer.
- Simmer for 15 minutes, stirring occasionally.
- Serve chunky over rice or blend the mixture curry with an immersion blender for a smoother curry.
