Sweet Potato Curry

This sweet potato curry is super comforting and delicious! It qualifies for my ugly but delicious category because it’s not a pretty dish. However the flavors are bold and tasty! It’s also full of healthy vegetables and is easy to make. I created this recipe when my in-law were coming to visit. They loved this sweet potato curry and so do we!

What you need to make this sweet potato curry:

Instructions

  1. Add olive oil to a large pan, followed by onions, carrots, sweet potatoes, and bell peppers.
  2. Saute on medium-high heat until onions and other vegetables brown slightly.
  3. Add diced tomatoes, salt, pepper, garlic powder, curry powder and garam masala and stir.
  4. Add water, coconut milk and bring mixture to a boil then reduce to a medium simmer.
  5. Simmer for 15 minutes, stirring occasionally.
  6. Serve chunky over rice or blend the mixture curry with an immersion blender for a smoother curry.

Don’t for get the naan bread!

  • rice to curry serve over
