Healthy Peanut Butter Brownies

These healthy peanut butter brownies are the perfect snack or dessert when you just need a brownie! They can be cooked 4 ways. In the waffle maker, in the microwave, in a mug, or baked in the oven. I have instructions for all of the methods.

I like to make these and freeze the extras so I have snacks or desserts whenever I want chocolate but don’t want to feel sick from too much sugar.

What you need to make healthy peanut butter brownies:

makes 6 servings.

  • 1 cup almond flour
  • 1/3 cup flour
  • 3 tablespoons cocoa powder
  • 1 cup sugar or sweetener of choice
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 2 tablespoons vegetable oil
  • 1/4 cup peanut butter
  • 1 teaspoon vanilla
  • 1/2 cup milk
  • 1/4 cup semi-sweet chocolate chips

Instructions:

  1. In a large mixing bowl, combine almond flour, flour, cocoa powder, sugar, baking powder and salt.
  2. Add the egg, vegetable oil, peanut butter, vanilla and milk and blend until batter is well mixed.

In the oven:
Preheat oven to 350 F.
Line glass dish with parchment paper and bake for 20-25 minutes or until a toothpick comes out mostly clean, it will have melted chocolate on it but just not wet batter.

For making in a waffle maker: Grease top and bottom of waffle maker.
when opening waffle maker, be gentle so the waffle doesn’t split in half. You can use a fork or rubber spatula to gently pry the waffle from the top of the maker when you start to open it. If may take a few to get the hang of things.

For the microwave: Line a 8 x 8 inch glass baking with parchment paper.
Pour batter into glass dish and cook for 3 minutes and 30 seconds or until the center rises.

To make mug cakes: will make around 4-6 mug cakes, depending on your mug size. Fill mug 1/2 the way full and cook for 1 minute.
