This broccoli, quinoa and pork stir fry makes a healthy, delicious and easy dinner! The flavors and textures are great together and it comes together in about 30 minutes, prep to finish!

My kids like this dish served with the quinoa on the side and I like it all together, both ways are delicious! To be honest it surprises me how much my kids love quinoa. My daughters comment the other night was “yay! I love this kind of rice!” She thinks it’s a type of rice. Ha ha.

What you need this broccoli, quinoa and pork stir fry:
serves 4-6
1 pound pork tenderloin or chops, cooked or raw
3 green onions – diced
2 tablespoons toasted sesame oil
/2 teaspoon garlic powder
1/2 teaspoon ground ginger
3 tablespoons soy sauce
1/2 teaspoons sriracha
3 tablespoons honey
1 pound frozen broccoli florets
1/4 cup peanuts (lightly salted)
2 cups cooked quinoa (cook quinoa in chicken stock)
Instructions
- In a small pan, cook quinoa in chicken stock or salted water.
- If using raw pork tenderloin – slice loin into 1/4 x 1 inch chunks and saute over medium high heat with a sprinkle of salt until cooked through.
- In a pan, add green onions, toasted sesame oil and saute for 2 minutes.
- Add cooked pork, garlic powder, ground ginger, soy sauce, sriracha, honey and broccoli.
- Saute over medium high heat for 10 minutes or until broccoli softens and is cooked.
- Add peanuts and quinoa and stir together.
- Serve.
